While for some decades now wine has been an object of cult, the particulars of which are well known to numerous experts and enthusiasts, oil has remained in a sort of penumbra.
The moment has come for an awakening through the "discovery" of the monocultivar, that is, oils made from a single variety of olive.
Each dish will be matched with the monocultivar that most sets off its flavour, exactly as happens with wine.
